Homemade Almond Milk



Homemade Vanilla Almond Milk
Cookbook: Living Cuisine: The Art and Spirit of Raw Foods
Renee Loux Underkoffler
Makes 4 cups.

"A sweet and delicious fresh milk with the elegant essence of vanilla"

1 cup soaked raw almonds (soaked 4-8 hours)
4 cups filtered water
Pinch of sun-dried sea salt
1 T non-alcohol vanilla extract
1/2 vanilla bean (optional)
3 T raw honey or maple syrup (or 3 soft dates, pitted)

In a blender, at medium, then high speed, blend soaked almonds, water, and sea salt until smooth. Pour through a strainer (or use a nut bag) to separate pulp. Pour liquid back in the the blender and blend in vanilla extract and bean (if using) and sweetener until smooth.


Human beings should not drink milk from a cow. It's that simple. So many illnesses and afflictions in children (and adults for that matter) could be cured if they would just cut out milk and milk products. There are tons of doctors, organizations, websites, etc...that will tell you the same thing, so you can do your own research. Here is one to get you started. Almond milk is a delicious alternative to cow's milk. Once you make your own...you'll never go back! It's so creamy and delicious. Perfect for dipping cookies, baking with, or drink it plain. Yum!

That sounds yummy! I love almond milk. I buy it by the case through my buying club, but I would love to try making my own. I need to buy a new blender first. Any recommendations?

I LOVE homemade almond milk! I haven't made it in a very long time - you've inspired me to make some. Yum!

The honey in the recipe would add so much. The recipe I've used in the past was very basic and although good I think using honey (or agave nectar? we have some of that, too) would make it taste even better.

I think i told you that, but you converted me...and i've seen a big improvement in how I feel and my complexion..so, you're the one to blame if I get osteoporosis...hehe, only kidding...that would be my fault..or nana's..

Hi there!

I found your blog while searching for a recipe for homemade almond milk. I just soaked some nuts (to reduce the phytic acid) and as I was putting them in the dehydrator, I thought that it would be a good time to try some almond milk. I've never had any and have wanted to try it. So thanks for the recipe!

BTW -- the article you linked on Mercola.com doesn't really say that humans shouldn't drink cows milk. It says humans shouldn't drink pasteurized, homogenized cows milk. Dr. Mercola is an advocate of raw milk (I get his email newsletters) and so am I!

Oh, this sounds yummy. I have never tried any alternatives to milk. At this point I'm not quite ready to give up dairy, however the kids and I want to start making smoothies with soy or possibly nut milks. My question with the almond milk is whether is very fattening. Also, I searched this blog and didn't see anything about your smoothies. I am wondering if there is a site you would recommend, or if there are things that you would recommend that we add. Anyway, thanks for giving me this link. I was looking at the SoyQuick (I think that's what it was called) soy milk maker on Amazon last night. I was very interested in trying the nut milk though without having to purchase "fancy" equipment. Thanks again!

I usually add some flax oil to it, but I really don't worry too much about fats. Bella takes DHA supplements and also eats tons of olive oil and avocados.

I actually made almond milk today and came across your blog (I'm looking for something to do with the pulp.) I do want to note that raw organic milk is sooooo good but you need to get it from a reputable farmer - I own a cow share. Un-pasteurized, un-homogenized, no growth hormones, well cared for cows that aren't over milked.

I decided to make almond milk because I tried the kind from the store and thought "this would be good if it didn't taste like stale almonds ... I bet making my own would be tasty..." I poured out the container of storebought almond milk and made plans to make my own. Glad it had been on sale at the co-op. :)

Now still looking for something to do with the pulp but might find something on your blog ... haven't looked terribly hard yet.

I have never even heard of almond milk before but I am starting a new diet that includes this in the early statges as a MUFA contributor. After combing through all my local grocery stores, I came up empty handed as our town is not "progressive" enough to have almond milk in the stores. So I put on my thinking cap and went online. Thanks for helping me out and saving me money. I too would like to know what the fridge life of this is.

By the way, Sara, I really enjoyed reading through your website(s).

I just recently brought rice milk and almond milk to see which alternative would work best for me and my little ones. I tried the almond milk and I absolutely love it I'm not even going to open the rice milk. My eleven year old likes the taste but my five year old ( a die hard milk lover) said "this stuff is not nummy." I can't wait to try the homemade version and hopefully my daughter will come around. The pulp from almonds can be used as a face/ body scrub; put it a muslin bag... rub you can let it dry and rinse and without the bag as an exfoliator (a little messy) & honey is a nice addition

Hi! Thanks for the almond milk recipe. When I read your comment about cows milk I felt frustrated. I once believed that cows milk was not a healthy food for humans, and told everyone I knew to stop. Certainly, many people do not do well with it, especially pasteurized, homogenized milk from sick cows. But many peoples around the world have thrived (led long, healthy and happy lives) drinking milk from cows, goats, camels, buffalo, etc. That is an irrefutable fact. Saying that humans should not drink milk is not the whole picture. Check out the work of Weston A. Price, DDS. Or maybe you already have?

Actually it's *pasteurized* cow's milk you want to keep away from. Raw milk is beneficial--but banned in several states. (Doesn't the Bible mention a land flowing with milk and honey?)

Since raw milk is pretty well banned here in Ohio, I'm going to give almond milk a try.

I no longer drink cows milk or cheese because they upset my stomach, i read that soymilk is high in estrogen, and rice milk they say is acidic. I tried almond milk from the grocery store, and it is yummy. But your recipe is delicious!

I have no problem replacing regular cow's milk with Almond Milk (haven't tried it yet). However, I LOVE ice cream and cheese. Are there any substitution for those?

Soy milk is good but the one that you find at the super market is usuraly bad because its pack with vegetable oil and its not pure soy plus it taste awfull you should find pure soy milk organic and its healthy, i love almond milk too i buy organic almond milk i use to buy this soy milk it was so creamy and organic is was so thick and oh my so delicious i used to drink it with everything and raw honey mmmm!! but it was expensive

My daughter recently got diagnosed with Type 1 diabetes and she used to drink a lot of cow's milk, we think that is what must have caused it . She is 5 yrs old and our family has type 2 diabetes and not type 1. Anyway, heard about switching to almond milk and you did a great job on the recipe. My question is what about calcium and Vit.D for your kids? Do you supplement them?

I made some of this today, I read all these comments and was expecting to love it. Turns out I was wrong, im going to drink it any ways just so it does not go to waste, but I think I will stick to chocolate soy and 1% milk.

well your almond milk was awesome.
but you said something really bad at the end that cow's milk shouldn't be consumed.
there is nothing in this world that can substitute a healthy cow's fresh milk after the mother's milk.
and the site that you referred talks about "processed milk" and not any milk as a whole.
i am not talking of if its right to impregnate a cow for its milk, but what i am talking is that humans cant live without milk. right from a baby is born, its first food is milk.
so maybe either you are misinformed or you work for some soy milk company etc.
you can try it out.
try to compare yourself with someone who has drinks fresh milk from childhood. and you will find your answer...

Etch: She's quite right. Cow's milk is not made for humans. We have no need whatsoever for milk beyond infancy. Once babies are old enough to wean (preferably on their own timetable, not society's) there is no reason they have to have cow's milk to "replace" mother's milk. You are right that babies drink milk from birth, but if you gave them cow's milk from birth, they would not survive. Cow's milk is no substitute for mother's milk. Period. Why don't you do a little research on the negative health effects of milk. Like one of the previous posters, I feel MUCH better when my diet is 100% dairy free. MUCH better. My 3 year old can't have dairy. My 14 year old is nearly 6ft tall on a diet that doesn't include much dairy. He sometimes puts milk on his cereal, but leaves it in the bowl.
