Easy Pleasin' Oat Bars

Another recipe from Vive Le Vegan. These bars are really a great snack...they have the consistency of a chewy granola bar. Perfect for kids...really easy to take with you. They are not too sweet...just perfect. It's also wheat-free...which is a nice bonus.


Easy Pleasin' Oat Bars

2 cups ground oats (blend quick oats in food processor)
1 cup quick oats
1/2 t sea salt
1/4 t cinnamon
1/4 pure maple syrup
1/3 cup fruit sweetener or other thick honey alternative
1/4 vanilla or plain non-dairy milk
2 T canola oil

Preheat oven to 350 degrees. In a large bowl, combine all the dry ingredients. Add the wet ingredients into the dry mixtures, stirring until well combined. Transfer the mixture to a lightly oiled 8 x 8 or 8 x 12 baking dish and press down until it's evenly distributed. Using a sharp knife, cut to mark out the bars before you bake them to make it easier to fully cut and remove the bars once baked. Bake for 19-21 minutes, then remove and let cool in pan. Once cool, use a sharp knife to fully cut the bars, then remove with spatula.

Yum!

Starbucks is now carrying a bar that's similar to this, but that also contains dried cranberries, golden raisins, and pumpkin seeds. I might try this recipe with the addition of dried fruits and seeds! Thanks for posting this!

molasses is a good thick sweetener, is super healthy, and improves iron levels!! i also added a few splashed of floradex, a liquid vitamin/herb/iron supplement you can get for your children at health food stores. make sure to note never to cook with honey! it is fabulous raw, but when heated for a length of time, boiled at all, or cooked with, it becomes a toxin. it is known in auyvedic medicine that cooked honey becomes a thick rubbery indigestible consistency that sits in your stomach or intestines! yuck! also important: to make sure the person you get your honey from doesn't heat the honey too much more than warming it while separating out beeswax and propolis! or it's already ruined. thanx for the recipe! mine are cooling as i type! it's fun to get creative with the bars! i also added mashed up dates, with are soso yummy, and almond butter! keep bloggin!

I had never prepared Oat bars, so it's perfect because I can see it's healthy because of the ingredients, the only thing I wouldn't add is the maple syrup.m10m
